Candied Yams:

 

1 lg can yams

1 lg can crushed pinapple

1/2 cup brown sugar

1/2 cup butter

1/2 cup chopped pecans

 

pour the juice from the pinapple into a sauce pan with the stick of butter and bring to a slow boil. Stir in the brown sugar and return to a boil. Add the rest of the pinapple and the pecans. Simmer for about 5 minutes. Drain the yams and put them in a baker. Pour the pinapple-pecan mixture over the yams. Bake for an hour at 325. You can add extra pinapple juice if you want them saucier. (Is that a word?)

 

I hope your Dad's surgery will go well! Oh, and yay on the soon to be posted new!

OMG Dom!!! I just found out you're back! I am so happy, this is like the best news! There has been a serious lull in stories that have captivated me, and even if you are out of practice, im sure ill love anything you put up!

Does it have to be candied yams? Or just something similar? I hate candied yams. Yams and sweet potatoes are just fine without all the gunk added to them. Baked sweet potatoes are easy to do. Just wash them, trim the ends and slice them in half lengthwise. Score the cut side, line them up on a baking tray, brush lightly with some olive oil and sprinkle them with a pinch of salt and pepper. Bake at 400 degrees for 30-45 minutes, until you can easily poke them with the tip of a knife. They bake faster than white potatoes. Light sprinkle of cinnamon before serving is all the extra they need.

 

And Vic was happy as a clam to hook you and Jim up. You'd have thought he was a match-making mamma. :lol:

Dom! It is so great to have you back! I was getting depressed today and just wanted to blacken my mood a bit more by looking to see if you had updated your stories... because I checked at least once a week for...how long....well it doesn't matter now, I'm in a good mood!!!!

So, little old me is rereading ITFB and just puttering along, lamenting the fact that Dom has never returned, sad alas alack. I finish the last chapter, weep a little inside, and then go to double check Dom's blog, as I always do after rereading one of my favourites. And of course it seems that the blog has not been updated... And then I do a double take. And stare at the date on the blog. And read it. And realise that I have not read it before, and that it was from a few days ago. I then proceed to shit my pants with glee.

 

Thanks for coming back Dom! Take your time, I'm just glad you're still alive and kicking. You've made my day/week/month/year. Hahah. OKay, now go give your father a big hug from all of us.
