I made the Classic Recipe!
For the crêpes:
1 cup (120g) all-purpose flour
2 eggs
1½ cups (360ml) milk
2 tbsp melted butter
Pinch of salt
For the Suzette sauce:
3 tbsp unsalted butter
¼ cup (50g) sugar
Zest of 1 orange
Juice of 2 oranges (about ½ cup or 120ml)
2 tbsp Grand Marnier or Cointreau (optional but traditional)
1 tbsp lemon juice
Steps:
Prepare the crêpes:
In a mixing bowl, whisk together the flour, eggs, milk, melted butter, and salt until smooth. Let the batter rest for about 30 minutes.
Heat a lightly greased nonstick pan over medium heat. Pour a thin layer of batter into the pan, swirling to spread evenly. Cook until the edges start to lift, then flip and cook the other side. Repeat until the batter is finished.
Make the Suzette sauce:
In a saucepan, melt the butter over medium heat. Add the sugar, orange zest, and orange juice, stirring until the sugar dissolves. Bring to a gentle simmer.
Stir in the lemon juice and liqueur (if using), then remove from heat.
Combine:
Fold each crêpe into quarters and arrange them in the saucepan with the sauce, letting them soak up the flavors for a few minutes.
For a dramatic touch, gently warm some additional Grand Marnier, ignite it, and pour it over the crêpes for flambé.
