I should say some of them do dig through sand, but not as deep or violent as other catfish, and pygmy corys tend to hang out in the middle of tanks, cleaning of plants and rocks. I plan on getting pygmy corys... or possibly panda corys. They sift sand more than dig.

Corys, corydoras, are catfish. Princess cats will dig. Corys do not as a rule.

Yes, and I'm avoiding those. Some dwarf corys and shrimp for the bottom clean up crew.

Yup. Served a lot of brown cows when I worked for A&W as a young'un.

Yes, but it has its own problems, not being suitable for some plants etc. And, it is very expensive, as in astronomical for large tanks like mine. I am doing the Walstadt Method--- where Diane Walstadt recommends organic potting soil covered in two inches of sand. There are variations, with some recommending 3 inches of sand or gravel over an inch to two inches of dirt. I'm going with 1.5 inches of dirt and 2.5 inches of 2mm sand.

I washed dirt today. Yup, that's what I said. I washed and strained 14 small bags of the organic potting soil for my aquarium because it had perlite in it(which is safe but could cause problems later if it escapes the sand cap I am putting on top of it) which floated to the top when I soaked it in water. I think I might have bit off too much.

I spent $300 today on Aquarium plants and didn't get all I wanted... they didn't have three plants I was looking for. My favorite fish, roseline sharks, are $30 each but I'm not ready for them yet. I want at least six. Oh, and they asked me if I wanted to be a member for points and I said sure. Gave them my info and turns out I was already a member from 15 years ago, and the points don't expire. I got $25 dollars off my order.
