I think they would taste similar to red potatoes, and most likely are better-suited for roasting or boiling. And it would certainly make a unique presentation as a salad.
There are regular and "yam" varieties of purple potatoes, apparently.

Asparagus is another one that I thought about growing, and I've heard that planting onions and potatoes from your pantry will cause them to grow into a new plant.
I've thought about growing different varieties of potatoes like those. I imagine they're much hardier than the Russets or reds I normally buy at the store.
Hey, Bertie. Two days ago, it was cold and gray with freezing rain. Now it's 69F/20C and the sky is clear and blue with nary a cloud, and a soft breeze is playing with the new buds on the trees. I spent the afternoon planting my garden, and took a walk to the park (while observing the proper social precautions). Now I might cook hot dogs over a bonfire later.

I actually agree with Belgium on this. In WWII, the Belgian people spoke French, and I believe, their military uniforms may have been too similar in appearance to those worn by the French army. The American soldiers who arrived in Europe became confused, thinking they were still in France, and the name "French Fries" stuck. The proper term, however, is "Frites".
