Getting back to the hot weather we just had, it looks like we’re in for rain - possibly - just about every day this coming week. One thing I hope we don’t have is a relentlessly hot summer like we did last year. *fingers crossed*

Given your enthusiasm, I’m going to have to try this. This is the one I buy. It’s more like dark chocolate than milk, and it’s not dusty like som other HC’s are

You gotta do what works for you. I’m glad you found an alternative. I mix coffee with hot chocolate because I need too much sweetener and cream to make it palatable. My way means neither of those are involved, though the HC probably has sugar in it. It’s been a while since I looked at label. I use the PC brand which isn’t as sweet as Carnation that I do know.

Yep, I hear you, though for me it was iced salted caramel (Nescafé), though I’m not sure if the flavour was true to its name. Will probably go back to my regular iced half coffee-half hot chocolate.

Uh oh, science and me don't get along so well. I did learn from google that I should have used only four rather than five extra x-large eggs. Apparently, when a recipe calls for only one or two eggs, the size difference doesn’t matter. It does matter when the recipe calls for five eggs. Next time. I had one at lunch today, and it was very tasty, so all was not lost with this first attempt.

@Mikiesboy I forgot to let the oats sit I make my own oat flour, but I used a different food processor last time, so they were a bit coarser. I think, I’ll blend again them with the mini chopper which is my usual go to. I think you’re right about the eggs. I’ll use large next time.

@MichaelS36 It was t recent, but I know these bars have been talked about in the past, and that they were well liked by you. I think base was a little wetter than Sasha’s, because I measured the honey not so well. Got a plan for next time, so it won’t happen again. It was too wet to do the finger press. Also, we only have extra large eggs (they are smaller than they used to be) so I still used five. I’m thinking maybe four extra or five large (they’re also smaller than they used to be) would be better the next time I make them. Maybe that will make a difference. In the end, the lemon did set pretty well and it tastes good, so it’s okay, they don’t look as good as Sasha’s. Getting it right is going to take a bit of practice. Good thing they’re delicious. PS: Yes, I had to cook the base longer. Next time, the base will not be doubled to see how that goes. I’m determined to do them justice.

@Mikiesboy So. I made the lemon squares. A commenter in Youtube said she doubled the oatmeal base, so I tried it that way. Not bad, but defo going to make the recipe exactly as Sasha does the next time. They didn’t come out as pretty as Sasha showed us, but they taste quite good, and bonus, my mom likes them too. Next time, I’m going to use maple syrup instead of honey. Also, I’m going to make the base ahead of time, so it cools completely. I’m hoping that will stop the topping from - mostly - seeping through, because boy, did it ever as evidenced by the mess under the parchment paper.

That is a a big jar. I can get the PC brand that’s about half that size or stick with butter. The recipes I make call for either butter, coconut oil and a third option that has slipped my mind. I’m thinking the taste would be altered depending which one is used. I’m keen to find that out.

Quick question. The lemon bar recipe calls for coconut oil. Do you use that butter as a substitute? I have a lot of butter, but no coconut oil, so I was thinking to use that - google says it’s the best substitute- instead. Unsure if there’s a big difference or not - re taste, healthiness.

Speaking if chili, I’ll be making that soon, so I can freeze it in serving sizes. I was thinking the biscuits would go nicely with the roasted red pepper soup I make.

No humidity for me today, though it has been feeling soupy other days despite the cool temps. Currently it’s only 18C (64F). Looks like rain all weekend, so a good time for baking - Sasha’s Strawberry Oatmeal bars or Mall cookies. Can’t decide which. Maybe both? 🤔
