I’ve got two blogs and I want to add a new blog to one of these but I’m being asked to name a “Category” - I don’t understand what this is or what I should enter in the text box.

Just name a category something like "general" or whatever would fit.  Categories are a new feature of blog that can't be turned off.  So, you have to enter something. (or select something you've entered before once you've created something)
