You’ll love them, I guarantee it. FYI: they’re super soft just out of the oven as evidenced by the damage the one cookie sustained in the “crash” with the oven mitt, so they do need to rest on the tray for a bit while they cool. I substituted brown sugar for Splenda brown sugar blend. Using the Splenda conversion calculator that meant I used 1/3 c of the brown sugar blend. They’re getting crispy on the outside now, but still chewy on the inside.

@Mikiesboy The first batch of Mall Cookies is out of the oven. I accidentally squashed in the side of one with my oven mitt, so, of course, I have to eat that one right away. I’m baking the trays separately at 10 minutes, which seems to work well in my oven. They may be browner than they’re supposed to be, but they still look good and OMG are they tasty. I am defo making them again. PS: I used my medium-sized - less than 1/4 c - trigger-handle ice cream scoop to measure them out so I ended up with 11 cookies altogether. Edit: Oh, and I made them as per the original recipe with 1/2 c old-fashioned oats and 3/4 c mini chocolate chips. The one thing I did differently was add in a full tsp of cinnamon rather than the recipe amount of 1/2 tsp. Can’t really taste the difference, imo.

I’m back from getting the eggs, and I also got Splenda brown sugar. thing is, I took the long way to the grocery store, so I could get in a walk at the same time. Now, I’m too tired to make cookies. Oh well, there’s always tomorrow…

the reason I mentioned the crunchy peanut butter vs smooth is because they’re quite oily - store bought as I don’t have a food processor strong enough to make them from scratch - because they separate while just sitting unopened.

I see what you mean about the amounts. I love chocolate chips - I use minis - but that is quite a bit. I am surprised, there’s so much sugar in them, though as I usually make cookies or squares that use maple syrup or honey instead of sugar. I read an article yesterday, and one of the things it said is the amount of sugar can be reduced by 1/3 and the recipe still works. I told my mom about that assertion, and she told me one of my cousins does this, but it never turns out well…

I just love Simone’s dignified response to CJ’s tickets and backstage passes offer. Makes me like her even more than I already do. I think she’d be a really cool gal pal, one could count on no matter what.

Loved their convo in the hotel room. Ribbing and talking smack with each other is proof of the solidity and closeness of their brotherhood. As for CJ? Owen’s correct. CJ seemed to be having too much fun egging on Peter Pure.

Sorry to hear you’re under a nasty weather watch. As for me, there was a weather watch for snow/icy rain earlier, but now it’s just rain, which isn’t happening at the moment. I hope your weather watch passes uneventfully.

Uh oh, could this be the calm before the storm? 🤔 I have to say, CJ handled that inquisition rather brilliantly. Question is, Simmone is rather brilliant herself. Did she fall for CJ’s subterfuge or will she humour him and let the matter drop? Must continue reading to find out… Edit: Odd, but I didn’t have the same reaction the first time I read this chapter - I checked. Also, with Stephen, my first reaction was him being a pod person. Strange places my mind goes. lol PS: I find it interesting CJ is bothered by Simone’s questions. I have the urge to tell him to suck it up, buttercup, and deal with it.
