  1. There's a right way to do it, and that's by roasting thinly sliced potatoes in a wood-fired oven. At The Filling Station Microbrewery, they sometimes serve a pizza called the Ross-shire, which has garlic oil, herbs, sauteed leeks, mozzarella and Parmesan cheese, bacon, and the roasted potato slices. It's one of my favorites, but it's very light on starch and big on flavor.
