  1. It looked like a pretty basic recipe. All purpose flour, wheat flour, milk, salt, yeast, olive oil. I flipped the ratio of wheat flour and white flour, but still it was only a 1/4 cup difference. Oh well.... I'll try something else next week. Still looking for a good, healthier wheat bread recipe that's not too dense. I'm not a huge bread eater, but when I do have it I want it to taste good. I love multigrain bread occasionally so I'm searching for a good recipe for that too.

    Chapter 13

    Nowadays ordering birth certificates can be done online, at least in the US. I used to have to walk a few of my clients thru it when I worked in travel and they needed it to apply for a passport. I like the transitioning feel to this chapter. Ethan is coming around to accepting that he needs help navigating the 'real world'. He's been hiding in his own little world too long. It's good to see him experiencing things that are engaging him socially.

    Will, Will, Will. Whatever will we do with you? Will has made such huge strides toward maturity and then takes a step back, reverts to slut banging the guard and has the audacity to get upset when he sees Connie with other guys. Thankfully he caught himself and didn't act on his first instinct. Tough to get gut punched though being on the opposite side of falling in love. Still so hard to remember how young he truly is. He better watch out. Nothing good ever comes of blowing off a phone call in this family! Nice chapter Mark!
  4. I had a hit and miss day with meal prep. I roasted carrots, zucchini, eggplant, onions, and Brussel sprouts. Took 5 separate batches but they all came out amazing. Popped it into containers with some chicken and voila! Eight lunches in the freezer for the next few weeks. Made beef barley soup...not too sure about it yet. Been in the crock pot for about 5 hours and the onions aren't translucent and that's how I like them. Probably should've par-boiled them first. I tried a recipe for sugarless bread. Don't. Just don't. It was pretty gross. My son threw his laundry in the washer before going to the beach. Calls me 15 minutes ago. Did anyone put it in the dryer? His work stuff is in there and he has to be there in an hour. 🙄🤐🤦‍♀️🤷‍♀️ Me thinks he's wearing damp clothes to work.
  5. I do the same thing! Also I don't recognize most of the residents where I work when they come in without a mask! I agree molly. There are too many people who still haven't been or won't get vaccinated to feel comfortable being without a mask in close quarters. I wondered the same thing! Not much on the agenda today. A little meal prep for the week and trying to mentally prepare for another 6 day work week. Ten more work days until vacation. That's 9.5 too long in my opinion. Update on doggy door. Zeke seems to have gotten the hang of it! Camden has problems though because his belly gets caught on the bottom part. I'll have to make a small ramp for him. He can't jump like he used to. He's a little pork pie. Hope everyone has a good day!
  6. He'll eat almost anything. That's why he's the one who usually hurls on the floor..😂 He stole a slice of cheese as I was giving Camden a piece for coming thru the door first. I stupidly dropped the other hand down too low and he snatch it.
  7. We bought a dog door panel for our slider. Little guy, Camden caught on pretty quick. Zeke, the intellectually challenged one....well, let's just say I should probably go get some more cheese to lure him through 🤦‍♀️🙄🤭 This may take a while!

  9. It was a splurge. I don't regret it. Just sucks finding out the hard way that fried food does not agree with me whatsoever anymore (probably a good thing though...not as tempting knowing I'm gonna feel crappy after, sorta like when you realize you can't drink like you did when you were 20!)
  10. Other than work getting in the way today was a really good day. It's always good to see my son. I'm not looking forward to him being so far, but I'm so proud of the adult he's become. My toes look ah-mazing! I tried a new color that changes from a pink to a purple that's sort of glittery. So pretty! Dinner was a massive failure in the sense that we went to our favorite BBQ place and there's nothing healthy on the menu. It sure did taste good though!! Bloat City on the drive home. However, I tried to compensate by going for an extra long walk with the dogs when I got home. Felt better after. Back on track tomorrow. Hope y'all have a good night!
  11. I hear ya! I've had quite a few of those moments when I've asked myself questions like...I wonder if Spaghetti Os would be good with tuna fish?🤢 Other times I've found some amazing combinations like animal crackers with Wispride port wine and cheddar cheese (so what if I was pregnant at the time🤪) Just got back from lunch with my boy and his girlfriend (who I really would love to have as a dtr-in-law.) Lunch was good..teriyaki salmon with seasoned rice and a side salad. Already missing them.
  12. I'm a patient person....until I'm not. Some days the rope is longer than others. Today I have little patience...I just want to see my boy! I also have a date with my Florida bestie to get our toes done tonight. Work is just getting in the way! @Wayne Gray hash master and culinary inventor extraordinaire! 🤣

  14. This has definitely been a long week. I get to see my older boy tomorrow. He and his girlfriend are stopping to have lunch with me on their way to Miami for his old roommate's wedding. I. Can't. Wait!

  16. That's sad. We're really lucky down here. We have Aldi's which is really reasonable for staples like milk/almond milk, eggs, bread etc. Detweiler's is the Amish market I love. Great produce, meats and fish. Pricy for everything else. BUT...they carry things like almond flour, chia seeds, flax seeds...so, there's that. Two grocery stores, Publix and Winn Dixie are good when you shop the sales. It's more effort, but now that things are getting sort of back to normal it's worth it. More exercise when you have to go up and down aisles vs ordering online from the recliner!

  18. I have cut the cord to Walmart. They pissed me off once too many times..lol. I haven't stepped foot in one since the beginning of April. I get the generic version at the grocery store occasionally. I don't add any sweetener to coffee other than the flavored creamer. I also get flavored coffee beans and when I have that I just put in a little half & half. Medical issues are a huge wake up call, especially the older you get. Fear is a good motivator when your mortality is staring you in the face. I'm getting there. Slowly but surely (I started typing, Shirley, lol) I'm happy to say that I've lost 20lbs since March 1st. Still going to be a battle...but one I'm determined to win. Hardest part is working on the mental side of it. Food addiction...unfortunately you can't give it up completely. I have to learn to get past my inner obstacles and do what's right.

  20. I've managed to almost do away with refined sugar. (Flavored coffee Creamer is the one thing I won't budge on...I did switch to almond milk based) I may switch to maple syrup for certain things. The only problem with that is my husband loves it so it disappears quickly.
  21. Aw hell.... Why is it that I automatically gravitate toward everything that's not good for you? I didn't know about the insulin sensitivity. Guess I'm not using that anymore. Dammit. Thanks for the info....even though it burst my bubble. Shit.
  22. I can't taste the avocado. It's probably one of the mildest oils I've tried. Sesame oil has a strong flavor like olive oil does. The Amish market I go to has several odd varieties of oil.   23. Me too! Also... I swapped out honey with Agave nectar. It has a lighter flavor. Avocado oil replaced the butter....less saturated fat.
