Probably too late for tonight but how about stuffed eggplant?
I brown what ever kind of ground meat strikes my fancy and drain, slice an eggplant in half and hollow out leaving about a quarter inch wall, saute the insides and then mix that and the meat into my basic Italian stuffing (goodly amounts of garlic and Parmesan cheese is what makes it Italian) and then stuff back into the eggplant. Bake @ 350* for about 25 to 30 min, until eggplant shell is turning soft. I usually plan about 1/4 to 1/2 eggplant per person depending on the size. Reheats beautifully in the microwave for lunch too!
Yep! Powder room is down the hall to the right, sleeping quarters with in suite's are up stairs and in the basement, Jacuzzi in the main bath, and laundry and pantry thru the small door in the kitchen.
If you look, the doors to the right fold back to a sun room, essentially doubling the size of the kitchen, without making it like running cross country to cook.
Your room is down there to make it easy to keep quiet, dark and cool in case of bad headaches.
Good morning all! Clock may say 6 am, but horses dont care what clocks say, breakfast should be at normal time regardless. Easier this time of year than spring. They dont seem to mind being fed early! Come spring it takes the better part of a week feeding 10 min later every day for them to adjust.

Great Room is the huge one in the back, three sofas and a couple recliners in a semi circle around the fireplace. I know open hearths and wood fires are not the most efficient, but you can't beat the atmosphere.
