Hey, so with the economic state making a turn for the worse I thought i'd share with you some simple cheep recipes I've been living off.

 

 

Broccoli soup

 

2 heads of broccoli

2 potato

oil

a pot

water 

1 or 2 stock cube

Blender/Wand

 

Step one

Wash peel and chop your potato's in to cubes.

 

Step two

Wash and chop your broccoli. Chop of the end of the stem and chop up the rest of the stalk. 

 

Step three

Poor the oil in the pan and start to heat meanwhile put the kettle on to boil. 

 

Step four

Fry the potato and chopped stalks. Leave momentarily while you add your stock cube and pour in the boiled water.

 

Step five

Stir and add in half of your florets, and leave on a low heat for 20 - 30 minutes.

 

Step six 

Add in last of the florets and leave for five minutes before blending. 

 

Step seven

Serve, in bowls with cheese or bread or both. Equally none.  Enjoy

 

 

Cajun Chicken

 

Ingredients

 

2 chicken fillets (Uncooked)

1 chopped onion

mushrooms

Seasoning of choice Cajun (supermarket for about a pound)

Seasonal vedge of choice (Best is Curly cale & bean sprouts or just a cheep bag of stir fry vedge)

1 tub of double cream. 

a frying pan

oil

 

Step one

Chop up your chicken in to bite sized chunks (Optional if you have any marinate in soy and cajun)

 

Step two

Fry your chopped onion and seal your chicken.

 

Step three

Add in your vedge Stir before adding cream. 

 

Step four

Add in your cajun to taste and leave for approximately 10 minutes stirring frequently minutes. 

 

Step five

Add in your mushrooms and leave for up to 20 minutes stirring and keeping and eye on the dish.

 

Step six

turn off the heat and sever with jacket potato or on its own. Enjoy.

Chicken breast and mushrooms and double cream?  Sounds pretty posh to me.

 

Here's what I ate most nights back when I worked at the university and my paycheck regularly ran out 3 weeks before the end of the month.

 

Tomatoes & Rice with ???

 

1 tablespoon vegetable oil, butter or margerine

1 medium onion, chopped

8 ounces meat (ground beef, hot dogs sliced up, chicken livers, whatever you can round up) optional

1 cup cooked beans (kidney, pinto, garbanzo, whatever you like) optional

1 cup uncooked white rice

2 cups canned tomatoes

1 teaspoon salt

1 teaspoon Mexican chili powder & 1/2 teaspoon cumin (or any spices you like with tomatoes and rice)

 

Drain juice from the tomatoes and add enough water to make 16 ounces liquid.

 

Lightly brown onion in oil.

Stir in meat (if you're using any) and brown.  You might want to drain drippings from ground beef, sausage or any other meat with high fat content.

Add spices and stir until lightly toasted

Add remaining ingredients, including the tomato & water mixture; bring to boil; stir, cover and reduce heat to a simmer.

 

Ready to eat in 25 minutes.  Makes 2 servings.

 

Note:  If you're not using any meat you should really try to add beans &/or top with some cheese.  It also works to substitute slightly undercooked macaroni or other pasta for the rice and leave out the extra water, just use the juice from the tomatoes and reduce the cooking time.
