Zucchini, pumpkin, etc, all things farmers would have an over abundance of. What to do with it? They couldn't store but they could cook with it. So put it into bread and muffins. I make the pancake with corn muffin mix, a personal preference. I prefer patty pan squash to zucchini, an even more delicate flavor, but it is only available from local gardens in the summer. And that's a COFFEE mug in case anyone relates the label to an earlier conversation. 😉 2 4

Michael is a diabetic. He loves pasta. Of course, He shouldn't eat too much of it. So we bought a spiralizer. A bit of regular hi-fibre pasta and a whole lot of zuchinni noodles whizzed up in the spiralizer. I dump them in with the regular ones in the last few minutes of cooking and ta-da!! diabetic friendly pasta. I love zuchinni coins.. slices baked in the oven with parmesan cheese and freshly ground black pepper. Very yummy. 2 3
