I was thinking of the Ruby ones with just the purple skin but these are full on purple

I think they would taste similar to red potatoes, and most likely are better-suited for roasting or boiling. And it would certainly make a unique presentation as a salad.   :)

There are regular and "yam" varieties of purple potatoes, apparently.
