I think they would taste similar to red potatoes, and most likely are better-suited for roasting or boiling. And it would certainly make a unique presentation as a salad.   

There are regular and "yam" varieties of purple potatoes, apparently.

Purple potatoes are similar in taste to a regular russet potato. They have a less starchy, more moist texture.

Which means they would make a good Potato Salad.

I did too and surprise! They're even being cultivate near Amiens where I live for college! There is a farm specialized in old time/heritage potatoes! That's so cool! You can order online and they have pick up boxes in different city nearby

Hi all,

Lazy Sunday here. I don't know how that happened but last night it was about 11pm when I went to my room and did some crochet like always but suddenly I needed to pee and checked the time and it was 4am!!  So yeah I've just woke up from a post Sunday roast nap
