The weird thing, even though I don't love the humidity, I'm used to it being humid Not comfortable in it, but used to its presence If I leave the humidity it feels weird.

There's so many other meats that pair well with brisket. Ribs, ham, sausage, chicken....even more brisket.

Hi future-bro, the cold getting you down? It's been oppressively humid in North Texas, so I'm having like the opposite problem. Except the weather keeps fluctuating, so I can never really get comfortable. You'd think after almost 20 years I'd be used to it. But, nope.
