A coworker is getting married out at the beach tonight. It's going to be hot AF but at least the reception is at our clubhouse. I mentioned the zucchini thing to Michael, who is willing to try it. So, next time at the grocery store, I'll get a couple. They will be nice for snacks. I dehydrated a bunch of lemon peel, which I make into lemon pepper seasoning. It is so much nicer than the one you buy. Mmmm, lasagna. That may have to be an upcoming meal. Hmm, maybe with some dehydrated zucchini and eggplant strips in place of some of the noodles. They would have a different texture when they rehydrate in the lasagna than the fresh versions do. It's great with fresh, but that could be fun to try. 4 Link to comment

I started keeping a file of KU titles I’ve read as hyperlinks, so I can reread stories I really like. Mikiesboy Posted June 9 Author Share Posted June 9 I made these for us this morning... mmmm soooo good. I changed the flour to whole wheat and the sugar to 1 tablespoon of splenda brown. Otherwise no difference. These were so good. We like cottage cheese so i just added it as is, but if you don't care for the texture, you could blend it first with the eggs. I wouldn't do it all in the blender because it gets very thick. I'd dump out the cheese/eggs mix and then add the flour and baking powder by hand. The oil in the recipe is meant to fry in. It's downright cold here today... cloudy, windy and like 48F. But i am not complaining. Any day i do not need the AC is a good one.
