And since someone asked, here's the recipe for the Lemon Cheesecake I made:

 

Blend 250g (8oz) of sweet biscuit crumbs with 125g (4oz) of melted butter. Press mixture firmly into an 8" springform tin (base and sides). Chill in freezer while preparing filling.

 

Beat 500g (16oz) of cream cheese in a large mixing bowl until smooth.

Add 1 cup of condensed milk, 1/3 cup of lemon juice (ripe), and 1 tablespoon of lemon rind. Beat until smooth.

 

Whip 1 cup of cream and fold into cream cheese mixture.

 

Pour mixture into chilled biscuit base and chill in refrigerator a minimum of 4 hours but preferably overnight.

 

Serve topped with extra whipped cream and fruit,or a sprinkling of nutmeg.
