Jarrah honey is awesome but I might be biased there. We have mass produced blended brands but there has been an explosion of super localized honeys. Each with their own favour. There is one brand that sells honey by the postcode, so you can buy honey from a particular suburb branded with postcode on the label.

I know a lot of things to make with honey. When I was young, I raised bees and so we had lots of apple honey and star tassel!

I saw a show about maple syrup production. Because of the boiling process, most syrups end up tasting the same. Homogenous, from one brand to the next. Now, though, some manufacturers are choosing to use an evaporation process instead of boiling. So you can taste the unique characteristics of each brand by the region the syrups were made in. Sort of like the "terroir" in a bottle of wine.
