I saw a show about maple syrup production. Because of the boiling process, most syrups end up tasting the same. Homogenous, from one brand to the next. Now, though, some manufacturers are choosing to use an evaporation process instead of boiling. So you can taste the unique characteristics of each brand by the region the syrups were made in. Sort of like the "terroir" in a bottle of wine.  :)
