Actually, ham comes from the rump/rear thighs of the pig. Canadian bacon, AKA back bacon, is cut near the spine, I understand. "Peameal" bacon was originally crusted with dried peas to help preserve it, but these days, cornmeal gets used instead.  :gikkle:
