New Mexico will be hosting Movie Night in celebration of Flag Day and the Army Birthday. They will be serving us Cucumbers to snack on and Bourbon to sip on.

Cucumber Tomato Salad

This fresh summer salad provides the perfect crunch!

 

• ▢1 long English cucumber sliced
• ▢2-3 large tomatoes diced
• ▢½ red onion sliced
• ▢1 tablespoon fresh herbs parsley, basil and/or dill, optional
• ▢2 tablespoons olive oil
• ▢1 tablespoon red wine vinegar
• ▢salt & pepper to taste

Instructions 

• Combine all ingredients in a bowl and toss well.
• Refrigerate at least 20 minutes before serving.

For the first two days of Summer, I'll be enjoying temperatures in the lower 80's. Starting Monday, we'll start our first heat wave of the season with temperatures in the 90's all week.

Its Photography Day so get out those Smiles today. 

Get out the swim googles. It's National Foam Day. 

Don't swim too far from shore today. It's Megalodon Day. 

We'll be enjoying Big Boy's for lunch today and Martini's in Happy Hour.
