Thank you for acknowledging that I'm in my twenties. ^_^

Yeah, some psychiatrists say it's important to support certain delusions till they get their patients on the right meds. -_-

Crêpes Suzette - Annemarie Wildeisens KOCHEN

Crêpe is always a good choice for dessert

Did you put alcohol in the dough? Think wisely cause your answer will determine my opinion of you -_-

I made the Classic Recipe!

  • For the crêpes:

    • 1 cup (120g) all-purpose flour

    • 2 eggs

    • 1½ cups (360ml) milk

    • 2 tbsp melted butter

    • Pinch of salt

  • For the Suzette sauce:

    • 3 tbsp unsalted butter

    • ¼ cup (50g) sugar

    • Zest of 1 orange

    • Juice of 2 oranges (about ½ cup or 120ml)

    • 2 tbsp Grand Marnier or Cointreau (optional but traditional)

    • 1 tbsp lemon juice

Steps:

  1. Prepare the crêpes:

    • In a mixing bowl, whisk together the flour, eggs, milk, melted butter, and salt until smooth. Let the batter rest for about 30 minutes.

    • Heat a lightly greased nonstick pan over medium heat. Pour a thin layer of batter into the pan, swirling to spread evenly. Cook until the edges start to lift, then flip and cook the other side. Repeat until the batter is finished.

  2. Make the Suzette sauce:

    • In a saucepan, melt the butter over medium heat. Add the sugar, orange zest, and orange juice, stirring until the sugar dissolves. Bring to a gentle simmer.

    • Stir in the lemon juice and liqueur (if using), then remove from heat.

  3. Combine:

    • Fold each crêpe into quarters and arrange them in the saucepan with the sauce, letting them soak up the flavors for a few minutes.

    • For a dramatic touch, gently warm some additional Grand Marnier, ignite it, and pour it over the crêpes for flambé.

Good, good👍 you can also switch the melted butter for some vegetable oil such as sunflower ;)

Cause some people on put either rhum, calvados, grand Marnier or cognac in the crêpe dough. *Whispers* And I do not like it <_<
