I often make it with my own stock, or store bought, some onion, carrot, celery diced... shredded cabbage, some beans and or barley. Just put in stuff you like and have in the house. Last time i dumped in some canned sliced beets. It tasted like borscht, which i love. I added some sliced mild Italian sausage. It was great. When it was cooler, we made end of the week soup. Leftovers, small bits of veg etc, went into the soup pot. You all can cook ... so go for it. 3 3

One for borscht, one for a veggie or chicken based and maybe something new. 1 1

Full disclosure: I didn’t like borscht before I had this version of it. He also makes Moosewood pumpkin soup which is quite good. Just to give you an idea of how long ago this was.
