I am up early to cook my greek chicken thighs which we will have for dinner tonight.  OMG they smell so good. Having an iced coffee too.. first of the season!  It's nice and gray out there so maybe it won't get so hot today.

while a few new recipes have flopped, i'm still game to try new ones. what makes the thighs Greek?

it's grey & wet here today too

He is especially relieved, no needles in the near future

i am grateful You listened to, and heard, tim and saw Your doctor

I haven't quite forgiven myself for putting him through that. It cost tim a lot to do what he did that day.

I don't blame Phil for being relived about that. That can't have been easy at all.

The greek spices and flavours ... I found it here and marinated them for just over 24 hours...  Greek Chicken Thighs

Sometimes the hardest things to listen to are the words we don't want to hear. Especially coming from those who love us.

I'm glad tim got you on the right track. Forgiving yourself..... another one of those 'hardest things to do'

It taught me a lesson. Though I am the one who is supposed to look after tim, I was not in this case. I wasn't seeing what upset and worry my inaction was causing.  My ego took a kicking, which was a good thing.  It made me look at our dynamic more closely.

Our Lifestyle cannot be a unchangeable thing. People grow and change, subs too.  I learned that isn't a bad thing, in fact releasing my hold on things somewhat has allowed tim to become more than what he was. he's shown me that the reins don't have to be so tight, that he is still my boy, is still as respectful of Us even though he's been given more freedom.

The changes I made were the right ones for us both.

This makes me happy for both of you. :)

I’m glad you’re doing well, Mike.

Went out onto the balcony, which now has NOTHING on it and cleaned up all the mess the balcony painters left behind ... 'we scrape off all the rust and old paint and repaint but we don't clean it up'  Gotta love that.

So when i went out to have some iced coffee in the breeze ... i'm like.. what is all of this?  There was like two cups of  crap out there. So i swept it up and got rid of it.

I guess we can put the garden shed (mini rubbermaid cupboard for the outdoors) back out there.  But Michael hauled all the junk that was out there down to the garbage. So it's empty now.

That’s something else. Cleaning up and taking away the debris they created should be part of their job description.

Outdoor space is important, so enjoy it with your next cup of iced coffee.

my dear DiC family,

i'm sitting here tonight with some celebratory hot wings, and an adult beverage.
Phil and i saw his retinal specialist today. you'll remember in March the news wasn't good. on April 7 He had an injection in the left eye. today's appointment was set to do a scan of both eyes and see if the swelling, etc. had stabilized.
i am happy to report that His eyes are "stable to mild improvement." He'll go again in 3 months for another scan.
all in all, a VERY good day.
so many of you have been on this journey with us, i wanted to let you know the good news.

know the symptoms of diabetes, it could save your life, your eyesight, or that of someone you love

Excellent news, molly. All best to Phil and you.

@mollyhousemouse

I found some jicama (still laughing over that lady's voice....HEEEEE-cuh-muh! At least I knew how to pronounce it at the farmer's market!)

I found a recipe for jicama tacos that looks amazing. I'm going to try that tomorrow.

Any tips on how to peel these things?.... keeping in mind I have a thumb that operates at roughly 50-60% of normal grip strength.

@Mikiesboy the Greek chicken looks really good.... I'll try it after we get back from vacation.

Five more days!! At least this week should go by fast at work. The managers from all of the Florida properties, plus a few from Chicago will be here for a two day sales training thing. I thought I  left these "motivational sales training" seminars behind when I got out of travel. *sigh*

glad you found it! i have Phil or a son cut into fourths, and then i use the paring knife to take the peel off. then i can cut it into "jicama fries" or sticks
If you can't get them to help, slice a part of to make a flat surface to rest the thing on, then just with a sharp knife, start slicing slabs off and peel those

My husband tends to hack at veggies. He usually peels the turnips at Thanksgiving so I'll ask him to help with these. Hopefully I'll have enough left to work with.

I can't cut them into 4ths, I  need thin slices for the taco "shells". I just ordered a slicer/dicer doohickey from Amazon that has a mandolin blade. With all the veggies I've been needing lately I think I'll get my money's worth out of it. It wasn't that expensive.

I'll let you know how they turn out!

I have a feeling I'm going to be the same way. Should be the best $30 spent on kitchen gadgets ever!

I know my thumb will thank me. Stupid thing has been screaming at me lately...ugh.

Got some already cut up watermelon at the store...damn is it good!

Won’t be getting one today, but someday a mandolin will be mine - I only just discovered them and think they’ve got to be a great gadget to have.
