I only had a handful of regular flour so I mixed it with semi-whole spelt flour and semi-whole wheat flour 🤷🏻‍♀️ we'll see

Sounds tasty. I've never worked with spelt flour, but I've heard tell that it can be a bit of a diva. Like someone I know. I'm sure it will be delicious.

I like it, often use it in crepes and pancakes.

I asked chatty for advice and it said to add a bit more milk as the gluten isn't acting the same as with regular flour.

The brioche is delicious. The different flours give kind of a "rustic" taste, close to like a whole grain bread. I actually find it more interesting taste wise than a brioche made with regular baking flour. I add pearls of sugar on top and it works great with the taste of the flours.

Did I wait for it to cool down to taste it? Naaah
