Happy cheese day!   I like many cheeses but I'd say for me goat cheese's and anything that tastes like mild or "cave" is a no.  

I had a delicious cheese plate at a tapas restaurant last Saturday.  One was a goat cheese, aged into a firm and soaked in red wine. That was actually ok.  I think it's the softer goat cheeses I dislike.

Morning All and Happy Wednesday

Good News yesterday.

After waiting just under a year to see a specialist, I finally saw one last week, had a pre-op on Monday and got a phone call for operation date for next Wednesday.

Nothing major, but I'll finally be pain free (Just day surgery to remove kidney stones)

A year wait to deal with kidney stones?!? My God! And here i thought nationalized health care was supposed to be an improvement over our system here.

Hope things go well and you finally get relief.

It is also World Environment Day. While we cannot fix everything ourselves, if we all do a few small things, it can help. Here are some ideas.

I've planted several trees so far. If you're interested in finding out more about what we can do to help, a quick search online will give you lots of options, like this one: pickling. 

Pickling prevents unnecessary spoilage, reducing the amount of food that ends up in landfills. Pickling food for longer storage is one of the many solutions for reducing food waste and the greenhouse gas emissions associated with it. Also, research shows that vinegar can improve the body's response to insulin and significantly reduce blood sugar after meals.

I made a jar of these the other day. They are great on a salad, burger, or sandwich. It's easy to do with onions, and fresh pickles are wonderful anytime. Next, I'm making fresh pickles with onion, cauliflower, and carrots.

My day started off great.  One of my coworkers even brought his new kitten into the office.   Things went downhill after lunch and now I'm home sick.  Weird Wednesday.

I've never had a donut and ice cream together, but for this Halley's comet/ blue supermoonish type event, I will try a Donut Chocolate Sundae. To make this event even more exciting, I will top it with a broken-up Crunchie Bar, as I was promised one by someone tall, but this has never appeared in my hot, sweaty hand! Just sayin'.

For those who are not aware of what a Crunchie Bar is (i'm sorry for your sheltered life), here is a pic:

I have done my part to partake in National Donut Day. I bought a dozen for my staff. Hooray for donuts!

I think this dehydrator is one of the best toys I have ever bought!

One of the things I miss most on a diabetics diet is potato chips, but I have found 2 easy to make munchies that ALMOST make me forget them.

Easiest is pepperoni chips. Sliced pepperoni into the dehydrator till crispy. 160* overnight in my machine. Be aware this renders most of the fat and oils out, so be prepared for drips!

 

Zucchini chips take a bit of prep. I peel them since the skins tend to give me ogida, slice thin ish on a mandolin (this is to taste, but mine are about 1/8th in). Marinade 30min in 1t sugar or substitute, ( I use splenda brown) 1.5t salt, black pepper to taste, 4T acv, 1.5T olive oil.  I turn every 5 min for good coverage. Then into the dehydrator overnight.

 

Salty, crispy, and lower cal, carb, etc. Also, I use unfiltered acv, the mother is supposed to be good for you, but I just like the taste better!

i love my dehydrator too ... we especially love dehydrated apples, ive done strawberries as well. 

Interesting about the pepperoni. I've not tried it or making jerky as of yet.

i'm not big fan of zucchini but that's cooked. i do like it raw, the chips are interesting.  i may try them. Thank you for the recipe.

Works with cucumbers too, but you need to lay them out on paper towel to dry a bit befor brine. Once dehydrated I can't tell the diff, so I stick to the zucchini as it's faster and easier and no wasted paper toweling.

 

Hubby likes it straight out of the brine. Says it reminds him of his gran's German cucumber salad.

i'd try the zucchini because i do like it raw.

My mum used to make a bowl of onion and tomato slices covered in a mild mix of vinegar and water. It was always a summer dinner staple.
