I love my helpers, but they really get in my way. Date squares were finished last night, and more were requested, so I made more of those today (with more changes to the recipe to make it a bit healthier), and bread is rising for more sandwich rolls. The trouble with baking and cooking is that people keep eating everything, and you must make more. 2 3

Have changed it to: Filling 2 1/2 cups (425 g) Medjool dates, pitted and chopped (lightly packed) (i use no name/store's own pitted dates) 1 cup (250 ml) water 2 tbsp (30 ml) lemon juice 1/2 tsp baking soda Crisp 1 3/4 cups (175 g) quick-cooking oats 3/4 cup whole wheat flour 1/4 cup oat flour 1/4 cup plus 2 tablespoons Splenda brown sugar 1/4 tsp baking powder 1/2 cup melted butter 1/4 cup unsweetened applesauce With the rack in the middle position, preheat the oven to 350 °F (180 °C). Line a 20-cm (8-inch) square baking dish with a strip of parchment paper, letting it hang over both sides. Butter the other two sides. If using a dark baking tin bake at 325F. Filling In a pot, bring the dates, water, and lemon juice to a boil. Add the baking soda and simmer for 5 minutes, stirring constantly with a wooden spoon or until the dates have fallen apart. Let cool. Crisp In a bowl, combine the oats, flour, brown sugar, and baking powder. Add the butter/applesauce and mix well. Spread half the crisp in the baking dish and press firmly. Layer with the date mixture. Cover with the remaining crisp and press lightly. Bake for 45 to 55 minutes or until the crisp is golden brown. Let cool on a wire rack for 4 hours. Well... today started out with a flat tire which hubby is dealing with, and I've already had 2 employees tell me about some unruly guests, so there's that... Looks like Monday taught Tuesday a thing or two. 😆 I've committed to eating better so while I would love a donut right about now, I'm gonna be good and go with a healthier breakfast of Greek yogurt and fresh pineapple. Today it's because I had a rather vehement discussion with a 4 year old Clydesdale mare yesterday. She went on her first off farm excursion since we brought her to her new home. Loaded great in the morning. She apparently decided she had so much fun on the trails at the wildlife management area she didn't want to go home. Well, when she realized it had gotten past dinner time she practically dragged her owner onto the trailer! 5
