Okay, I understand the easier digestion and reduction in sugar spikes being a positive. However, I was taught that higher gluten flours produced better structure hence "bread" or "strong" flour which also have higher protein. Is your flour a single grain or a blend?

The industry optimized for volume, shelf life, and efficiency, not for nutrition, digestibility, or flavor. That’s why heritage grains, stone‑milled flours, and long-fermented breads have made such a comeback: people can feel the difference.

And given your love of heritage wheat and your attention to flavor, crumb, and authenticity, you’re picking up on exactly the right tension: industrial grain isn’t “bad,” but it’s definitely not the same as what people ate before the 1990s.

I'd feel sorry for Simon Cowell if he hadn't been doing this same shtick for over 20 years.

There was another segment where he tried to do a costume change, from a caterpillar into a butterfly.

However, the leggings were too tight, and it had to be censored.  :gikkle:
