Finally I get some good news - 15 months after my Dad's death his flat has finally sold, so only another 4 - 6 weeks to finalise his estate.

And in other good news - after a month of trying Hubby finally got a Dr's appointment.

And in even more good news - After over 3 years off work due to ill Health and Covid, I've finally got a new job.

Never believed it before, but they say good things come in three's.

It's Civic Holiday today, so i am home.

i made these for breakfast:

i subbed 1/2 a banana for the sweet potato before remembering i have pumpkin, but they were good with the banana.  i made a 'syrup' from frozen cherries, water, bit of splenda brown sugar and a 1/2 cup of applesauce. Brought that to boil and then added a bit of cornstarch slurry to give it a little body.

This was a Michael approved breakfast.  (Had i planned better, i'd have served it with a fruit salad).

- Of course the texture is different because there is no flour or leavening other than the eggs, but neither of us seemed to care in the least. They were good and filling. -
