Posted August 3, 2015 Share Posted August 3, 2015 (edited) To celebrate that CC now has 100 followers (thank you, Kitt, for being no 100) I give you the dream cake recipe Danish Dream Cake (Drømmekage fra Brovst) 3 eggs200 gr (7 oz) sugar50 gr (1.7 oz) melted butter250 gr (8.5 oz) flour3 teaspoons of baking powder1 teaspoon vanilla sugar or 1 teaspoon vanilla extract2 dl (0.4 pt) of milk Whip eggs and sugar and suspend over boiling water (hang bowl on the edge of pot with gently boiling water in the bottom). Whisk frequently until mixture thickens. Pour in melted butter and add vanilla extract if using this. Stir well. Mix flour with baking powder and vanilla sugar if using this. Fold in flour alternately with milk.Pour the cake mixture into small flat, greased (or baking paper lined) baking pan. Bake for 20-25 minutes in the middle of the oven at 200 °C (= 390 °F). Prepare topping:100 gr (3.5 oz) butter250 gr (8.5 oz) brown sugar (this kind: brun farin)100 gr (3.5 oz) dessicated coconut (this kind: kokosmel)0.5 dl (0.1 pt) of milk Pour all of it together in pot over low heat and stir until mixed together. Pour on top of cake, even the topping out, and bake cake for another 5 minutes at 225 °C (= 440 °F). Remove cake from oven and leave to settle before cutting into squares. Enjoy. I look forward to hearing what you think of it. The only tiresome thing is the 'suspend over boling water' thing, but it makes the cake fluff up nice and thick. Make sure to push the cake mixture towards the sides of the baking pan, so that the cake doesn't get too high in the middle. 1 Link to comment

DOCC or Dicte's Orange Chocolate Cake 300 grams (10 ounzes) of butter 500 gr (17 oz) of sugar (can be reduced to 400 gr / 14 oz) 4 eggs 350 gr (12 oz) of flour 75 gr (2.5 oz) of cocoa (Droste or similar) 2 teaspoons of baking powder 2 teaspoons of vanilla sugar or vanilla extract 1.5 deciliter (0.3 US pint) of full fat milk (or mix of milk and cream) 0.5 dl (0.1 pt) of orange juice (preferably freshly pressed) 150 gr (5 oz) of dark chocolate chopped into pieces (or dark chocolate chips) 1 dl (0.2 pt) of boiling water Whisk butter and sugar well, add eggs one by one, add vanilla extract if using this. Mix flour with cocoa, baking powder, and vanilla sugar if using this. Mix milk and orange juice. Fold in flour alternately with liquid. Fold in chocolate pieces. Add the boiling water and stir carefully. Pour the cake mixture into two greased (or baking paper lined) loaf baking pans. Bake for one hour in the middle of the oven at 175 °C (= 350 °F). Cut into slices and eat with fork while still warm (for fancy serving add vanilla ice cream and raspberries or blueberries). Enjoy This really does sound delicious. I can see you are follower no 41 on TTP - but it's strange with the notifications, since you follow me as author. I assumed that's why you didn't need to follow the stories, and you did it now for CC to get it to 100. Maybe the notifications got buried under the COTT forum fun ? This really does sound delicious. I had my nephews and niece over, (8-12yr olds) so they were my guinea pigs taste testers. They absolutely enjoyed it, so that was even a better review than their parents. There's only two more chapters to go now until I catch up and then I'll be hungry for more. I was fortunate enough to visit Denmark a few years ago and I found it to be a wonderful place. We travelled there by train from Germany via the train ferry!!! Yeah, that was really cool being on a train which in turn was on a ship.
