Thanks Bertie  the color and mostly the highlights depends a lot on the lighting. On some pic it looks like a dark red on other it looks dark brown. It's supposed to keep changing for the next couple of days as the pigments oxidized.

Gelatin does not set well with pineapple. Jam and jelly are a different case since those rely on pectin to thicken. I'm fond of pineapple jam.

The recipe didn't call for pectin. Just to cook it for 10 to 15 minutes. I looks less tick than regular jam when I pot it so will see. But the flavor omg! You can really taste the pineapple and then you taste the rhum. It's delicious.

While many recipes call for added pectin it really isn't necessary as pectin comes is from the fruit. In my family we use equal amounts of fruit and sugar and cook that until it thickens.

Mine all sleep on the back veranda, and mob me each time I open the door.   I'm going to have to teach the kittens where the barn is.
