Recipe is from John Kirkwood on YouTube.  He was a professional 'cook' and the bread I make is his recipe. I make two, I use regular all purpose whole wheat flour and blend it with some Canadian white bread flour. About 400g of the white and 800g of whole wheat. I add some salt about two teaspoons, 4 teaspoons of yeast and about 3.5 cups of warm water and 4 tablespoons of oil. It mix it in the Kitchen aid with the dough hook. It makes two 2.5 pound loaves. 

He's the best and I love his voice. He sounds like Winnie the Pooh. His recipes are easy to follow and he's a really good teacher. Absolutely check out his channel and subscribe. He's a gem.

It's Nunavut Day ...

And another of our Canadian only chocolate bars, the Jersey Milk will not be made any longer. :(  I still miss the PeP. I loved those.

I know… There are other dairy milk choc bars and other peppermint patties... but it was a giant peppermint patty and was so nice.  I know… tim don't live in the past... give up pining for old things that are gone, and you are not supposed to eat chocolate anyway.  Okay, there is that.

Yep, he makes some excellent stuff. I bought his bread cookbook last year. My fav hot cross buns are from a lady from New Zealand ... which reminds me! There are still six in the freezer. Not for long. haha

nite, i've been going earlier too.. and i make sure i get up around 7ish and go outdoors and look at the light for about 20 minutes. it's supposed to help.. we shall see.  i hope you sleep better.
