My grandmother made the most spectacular leg of lamb that while providing an abundance of drippings for gravy, still remained moist and tender. She would cook it every time we would visit her in Boston, and it's one of my fondest childhood memories. We would lunch on open faced hot lamb and gravy sandwiches for days afterwards. Although my father was an excellent cook, one of his regrets was that he could never master her technique for that roasted leg of lamb. I like the low and slower method.. Into a roasting pan with a cup of chicken stock.. mine got turkey stock today. 2.5 hours later.. perfect.. juicy, and very tender. Yum. LOL. Dad said it was very tough, with a very strong foul taste, but never once did he mention a mint sauce packed in his rations. 3

I love it when my dad cooks lamb. He serves it with this great mint and horse radish sauce. We usually eat it a few times a year. None for Easter this year though. 4

No, it's just vinegar, a bit of sugar and freshly chopped mint, and a little water. 2

It is very expensive, which is why we haven't had any for a long time. i used the points we save up from the grocery store to 'pay' for ours. It's been a few years since we had lamb. 2

Or you could make yourself lamb chops. Don't know if you have an Aldi grocery nearby, but I find lamb chops there regularly. I can get 4 loin chops for about $10. I freeze two of them and marinate the other two in minced garlic, chopped fresh rosemary, lemon zest and olive oil for a few hours and then toss them on the grill. tim is 100% correct in that lamb needs to be cooked to only medium rare at the most or it's ruined. 1 4

I still have my snow shovel by the front door. My season supply of sunscreen has been procured. I should not, however, need to use both in the same week, but this year I have! Stay safe and use sunscreen! 2 1

Kitt Posted April 8 Posted April 8 😡 How does one maintain their sanity while doing taxes when one is married to a guy who cant remember what he has for breakfast but creates log in info for work portal and refuses to write said log in info down? Additionally, when told to get last year's return out of the file cabinet, bottom drawer front, he swore it was nowhere in the cabinet, that he looked thru all drawers and could not find it. I walked over reached in and pulled it out. 1 4

Seriously, it's the best money I spend during the entire year and I've never regretted leaving that stress behind. 2

Under normal circumstances that is exactly what I do, but because he has been on disability for 4 months, I needed info from his HR portal, for which Mr Seive for a Memory could not remember his log in info! You better believe I now have it written down after 30 min of "I forgot my log in" shinanigans! 2

Gary L Posted April 8 Posted April 8 3 minutes ago, Kitt said: Lol the taxes were the easy part. Strangling the info outta him was the frustrating part! Here in Spain the Tax Agency is, believe it or not, the most respected of government services. Given said agency is in receipt of ALL your bank details, you press a button and it completes your tax return. If you are owed money it takes about 5 days to receive it. If you owe money you have months to pay. I have to add overseas income and it recalculates things. I paid €45 for an accountant to check everything and she found a big error on my last ever employer details. Also married couples can decide to be taxed separately or together. 1 2
